Purple Monster Cupcake
Halloween is right around the corner and I have already been planning for our yearly Halloween party. These purple monster cupcakes have made the list! Aren’t they adorable?! This dessert idea is perfect because it doesn’t require a lot of talent or creativity to put it together. We have a really good homemade cupcake recipe from scratch that we have included in printable form below but honestly, you can use a box cake to make the cupcakes too.
There are a few tricks to making them all look the same that you need to know before you make them though.
First, you may want to use a cupcake scoop to scoop the batter into the cupcake pan. A cupcake scoop is not the same size as an ice cream scoop either. The ice cream scoop is way bigger. When you use a scoop all the cupcakes will be exactly the same size. Normally I’m not so picky to worry about it but these will be displayed on our table at our party and I want them to look nice.
Next you want to make sure you have the purple food coloring gel. Make sure to use the gel kind instead of the liquid kind. You don’t want your frosting to be runny and the gel will mix better. I use the Americolor Soft Gel Paste in purple just like this one here. There’s nothing worse than starting your project and realizing you don’t have all the supplies you need to complete it.
Now you need to think about the pastry bag and tip. You can get the pastry bags that are reuseable but honestly, I hate cleaning those out. What a mess. I much rather prefer the disposable pastry bags just like these here. I also used a large star tip just like this one here on Amazon to create the monster affect.
You can use any kind of cupcake wrappers. We prefer to use the green to give it a nice contrast in color but I’ve also seen some really cute Halloween themed ones too. Cute right?! We thought so.
Purple Monster Cupcake
Ingredients
- Cupcake Ingredients:
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 1 C sugar
- 1/2 cup unsalted butter softened
- 1 large egg
- 2 large egg whites
- 1/2 tsp vanilla extract
- 1/3 C buttermilk
- purple gel food coloring
- Frosting Ingredients:
- 4 C powdered sugar
- 1 C unsalted butter room temp
- 4 + TBSP of heavy whipping cream
- Purple gel food coloring
- Candy eyes
Instructions
- Cupcake Directions:
- -Preheat oven to 350 degrees. Line cupcake pan with paper liners.
- -Sift flour, baking powder, baking soda and salt in a medium bowl. Sit aside.
- -Using an electric stand mixer whip the butter and sugar until pale and fluffy in the mixing bowl.
- -Add in an egg, then the egg whites one at a time. Add the vanilla with the second egg white.
- -Using a liquid measuring cup whisk the buttermilk and purple gel food coloring together.
- -Start to mix 1/3 of the flour mixture alternating with 1/2 of the buttermilk mixture. Mix after each addition only until just combined.
- -After all ingredients are blended scoop the batter into the paper lined cupcake pan until each tin is 3/4's filled.
- -Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
- -Allow cupcakes to cool in cupcake pan for 10 minutes.
- -Remove cupcakes from pan and place each on a wire rack until completely cooled.
- Frosting Directions:
- -Cream the butter and powder sugar until it looks creamy.
- -Add purple gel food coloring. Stir until the color in fully blended throughout all of the frosting.
- -Test to see if the frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon it is ready if not then....
- - Add more powder sugar 1/2 C at a time.... mix well.
- -If ready scoop the frosting into the pastry bag with a large star tip.
- -Twist the open end of the pastry bag to push the frosting to the tip.
- -Frost from the cupcake edges inward to the center of the cupcake with a straight down with the tip.
- -Position the candy eyes on the top of the frosted cupcake.
