Keto Cauliflower Mac and Cheese Recipe
This Keto Cauliflower Mac and Cheese Recipe is unlike any other! There is a special amount of ingredients to make a cheese sauce that’s creamy and loaded with flavor and this recipe nails it!!
You can use chopped cauliflower florets or you can use riced cauliflower. If you cut the cauliflower florets in about the same size of the noodles you would normally use in this non-keto friendly version, it will look very similar. I like using riced cauliflower too. The cheese to cauliflower ratio is nearly perfect in every bit of creamy goodness!
Keto Cauliflower Mac and Cheese Ingredients
1 large cauliflower head (or two bags of riced cauliflower, frozen)
1/2 cup heavy cream
2 oz cream cheese, room temperature
2 tbs butter, unsalted
1 cup sharp cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
1 tsp ground mustard
1 tsp salt
1 tsp pepper
1 tsp smoked paprika
2 tbs parsley for garnish
Optional to make this dish extra special:
Add crumbled crispy bacon on top and some sliced jalapeños for extra spice!

Keto Cauliflower Mac and Cheese Instructions
Chop the raw cauliflower into small bite-size pieces.
In a medium sized pot, boil water and a pinch of salt.
Add the raw cauliflower to the boiling water and cook it until tender. This will take about 5 to 7 minutes depending on the size of your cauliflower florets. It may take longer if they are bigger.
Drain the cauliflower and set it aside.
In the empty and still warm pot, add the butter, heavy cream, cream cheese, mustard, salt, pepper, and paprika. (don’t skip the paprika! This is the spice that levels it out and adds a depth of flavor you will love!)
Stir the ingredients over medium heat until it all melts and comes together like a gravy.
Add the warm cauliflower and stir it until all the sauce has coated the florets.
Add the cheeses and stir until it has completely melted.
Top with parsley and serve warm.
