Caramelized Apple and Onion Grits Crostini
Ingredients
- 2 teaspoons oil
- 1 medium onion, thinly sliced
- 2 small apples, cored and sliced
- 1/4 cup uncooked grits
- 1 1/4 cups water
- 1/2 cup flour
- 2 teaspoons sugar
- 1/8 teaspoon salt
- 1/2 cup milk
- 2 tablespoons butter, melted
- 1 egg
- 4 ounces smoked gouda, shredded
- minced thyme for garnish
Instructions
- In a skillet over medium high heat add the oil and onion, sauté until the onion is soft and beginning to brown, 5-8 minutes.
- Add in the apple slices and reduce to medium heat. Toss frequently until the onions are caramelized and the apples are slightly caramelized, 8-10 minutes. Remove from heat and set aside.
- In a small sauce pan bring the water to a boil, slowly stir in the Grits reduce heat to a simmer and stir occasionally until thick, 5-8 minutes. Set aside and let cool.
- Preheat oven to 400 degrees.
- In a bowl combine the flour, sugar and salt. Make a well in the middle and add the milk, butter and egg. Whisk to combine. Whisk in the cooled grits breaking up any lumps.
- Spray two 12 cup muffin tins with cooking spray. Add 1 tablespoon of batter to each cup. Bake at 400 degrees until brown and crispy on the edges, 13-15 minutes. Remove to wire rack to cool. Reduce oven to 350 degrees.
- Place crostinis on a baking sheet, place a small amount of cheese on top of each, followed by a small amount of onion, apple slice and just a little bit more cheese.
- Bake at 350 degrees until the cheese starts to brown, about 8 minutes.
