I’m sure you have seen all the rage about corn chip dip on the internet these days and you know I had to make my own version of this classic recipe. I added a touch of TexMex with a creaminess that is out of this world.

To make it even easier, nearly all the Mexican corn dip ingredients can be chopped using a vegetable chopper. I picked this one up from Costco a few months ago, but you can also find a great one on Amazon too.

If you haven’t tried corn chip dip, then you are definitely missing out! It’s easy to make, tastes delicious and perfect to share during the holidays, with friends or family gatherings year round.

Here’s how to make it!

Creamy Corn Dip Recipe Ingredients

  • 2 cans corn, drained
  • 1 large red bell pepper, diced
  • Cilantro, chopped
  • 2 cups mexican blend shredded cheese
  • 1 cup mayo
  • Generous black pepper
  • 1 bag chili cheese Fritos

Optional

  • 1 large jalapeño, diced
  • 1 small Red onion, diced

How to Make Creamy Corn Dip

  1. Chop vegetables.
  2. Mix and serve as a dip.

Easy peasy, lemon squeezy…this dip takes no time to make and is so good!

If you are on a low carb journey, you can substitute the chips with sliced vegetables like bell peppers, celery, etc. or even pork rinds.
