Easy Cranberry Pear Cobbler Recipe
I am about to share the YUMMIEST and easiest Cranberry Pear Cobbler recipe with you! This recipe kind of came about on accident, but I’m sure glad it did. If you love tart tangy cranberries and sweet, juicy pears, you will love this decadent cobbler recipe!
In my family, cranberries get a bad rap. My grandma and I are the only ones who like cranberry sauce at Thanksgiving and Christmas, but I usually go ahead and make a yummy and quick sauce from fresh cranberries anyway (even though there is always an abundance of it leftover!) This year, I bought the fresh cranberries to make my sauce, but completely forgot to make it! Doh!
As I was clearing Thanksgiving leftovers out of the fridge one day, I came upon the bag of fresh cranberries sitting there. What to do with these guys??? I also had a few overripe pears that were about to go bad and needed to be used.
I knew that was a great flavor combo, so I decided to put a spin on my traditional peach cobbler recipe, and voila, the Easy Cranberry Pear Cobbler was born! One thing that makes this cobbler extra special is that the crust part is SO incredibly EASY!
I usually make it peach, but you can also use other fruits in it and it will turn out delicious any way you spin it. It is also special because it is my husband’s grandmother’s family recipe. You know when a recipe has been used for generations it has to be good! (I of course am sharing this today with her permission.)
Easy Cranberry Pear Cobbler
Ingredients:
- 1 1/2 cups fresh cranberries
- 1 large ripe pear, peeled and diced
- 1 cup sugar + 2 tablespoons
- 1/4 cup water
- 1 cup flour
- 1 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 stick butter
Directions:
- Simmer cranberries, 2 tablespoons sugar and water in a saucepan until it boils, stirring often. (I break the cranberries apart as they cook so they get sweetened through). Add diced pear and remove from heat and let cool.
- Melt stick of butter in the bottom of your baking dish ( I microwave right in the dish for 1 minute)
- Mix 1 cup sugar, milk, flour, baking powder, and vanilla in a mixing bowl.
- Pour batter mixture right on top of the butter- do not mix.
- Pour cranberry mixture over the batter, distributing evenly- do not mix.
- Bake at 350 for 45 minutes or until top is browned.
This Easy Cranberry Pear Cobbler was a bit of an experiment, but it turned out so fantastic that it will definitely become one of my go to desserts, especially throughout the holiday season because the flavors are just so Merry together! (See what I did there?) 🙂
