Easy Garlic Scape Pesto Recipe

If you love pesto as much as I do, you must try this Easy Garlic Scape Pesto recipe!  I cannot keep this stuff in the fridge.  The family gobbles this stuff up.  We just cannot get enough of it.  I also helps that I had a ton of basil and garlic in the garden too.  Fresh is always amazing.

There are many, many ways to use pesto.  For breakfast you can serve it up on toast or you can even put it on your homemade omelets.  I love adding pesto with my eggs.  It makes breakfast less boring.  We’ve also added this garlic scape pesto to some cream cheese and made a schmear for bagels!  I love the garlicky flavor on just about anything from morning to night.  That’s my kind of savory breakfast.

I’ve been known to make a pesto pizza too! Simply add this easy garlic scape pesto recipe in place of the sauce you would normally use and voila, you have a delicious pizza!  Here’s a tip though…  Pesto is very rich so you want to use it sparingly.  A little bit goes a long way on pizza.

Did you know that you can mix your pesto into some sour cream, guacamole, mayo or even greek yogurt to make an amazing dip?  Oh man,  it’s good!  I mean really good!  My favorite is sour cream.  I like that thick texture.  I love serving it up with those really thick pita chips too.

You can use that pesto dip you just made as a sandwich spread too.  I love mixing it with mayo on a grilled cheese sandwich.

We have also added pesto to this pull apart pizza bread recipe.  It’s a great idea when you want to change up the flavor a bit.  We’ve also added some sun dried tomatoes to the mix too.  The flavor possibilities are endless!

We’ve also topped our veggies with a bit of garlic pesto in place of butter.  Oh the flavor!  We did the same with baked potatoes too.

Don’t be afraid to try this easy garlic scape pesto recipe on meats too.  It goes nicely on anything from steak to fish!  Or how about a pesto meatloaf.  Yum!!!

And last but not least, we almost always put it in our pasta.  Who doesn’t right?

See, this is why I can’t keep this stuff in my fridge.  We use it on everything!

TIP:  My Cuisinart food processor has been making this pesto for more than 10 years using the same machine and it’s still going strong.  I remember when I bought this machine.  I wanted a good machine that would last a while because other machines I had failed after a year or two.  I absolutely love this machine because it has a wide base.  Lots of the food processors out there have a container that has a smaller bottom with a wide top and that type of food processor just doesn’t work as well for blending pesto.  I’ve also made this recipe in my Blendtec twister jar.  I like how the lid to the twister jar has side scrapers to pull the pesto from the sides.

Easy Garlic Scape Pesto Recipe Ingredients:

  • 1/2 C. fresh basil 
  • 1/3 C. fresh garlic scapes, diced into small pieces
  • 1/4 Extra virgin olive oil 
  • 1/4 C. parmesan cheese, freshly grated
  • 2 tbs pine nuts
  • 1 tbs. lemon juice
  • 2-3 tbs water 
  • salt & pepper to taste

Easy Garlic Scape Pesto Recipe Directions:

Add the basil, garlic scapes, grated parmesan cheese, lemon juice and pine nuts to your food processor and blend until chopped. 

Slowly add in the food processor while continuing to blend. 

If the mixture seems thick, add in a few tablespoons at a time until it’s reached it’s desired consistency. 

Store in an airtight container in the refrigerator. 

Serve over fresh zucchini noodles, pasta or spread on fresh baked bread and enjoy.
