Homemade Cheesy Scalloped Potatoes

Potatoes is just one of those things that we seem to have a lot of in our home. There are so many ways to make them, the options go on and on. This week alone, we have had mashed potatoes, french fries, cubed potatoes in our breakfast tacos and now….these Homemade Cheesy Scalloped Potatoes! I don’t make scalloped potatoes very much and to tell the truth, I usually just make the box mix. But I’ve been trying to get away from box mixes as much as I can, and after this recipe, I don’t regret it one bit!

  • 4 cups of potatoes sliced very thin - You can peel the potatoes or scrub them really well with a vegetable brush and leave the skin on.
  • 3 tablespoons of butter
  • 3 tablespoons of flour
  • 1 1/2 cups of milk
  • 1 small onion finely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon of pepper

  • dash of nutmeg optional
  • dash of paprika optional

  • Whisk in the milk, stirring constantly, bring it to a simmer and cook for 2 more minutes.
  • Remove pan from the heat and add salt, pepper, a dash of nutmeg (if using) and 1 cup of the shredded cheese. Mix well until cheese is melted.
  • Spread out half of the sliced potatoes into the bottom of the baking dish and pour half of the cheese sauce on top.
  • Repeat to make a second layer.
