Keto Friendly Crustless Pumpkin Pie with Paleo Granola Topping Ingredients
For the pie: For the granola:
1 can pumpkin puree coconut oil, (1/4 cup), 1 tsp vanilla, 1 tsp Stevia
3/4 cup stevia 1/2 cup of almonds, walnuts pecans & hazelnuts
1 tsp ginger 1 cup pumpkin seeds, 1 cup sunflower seeds
1 tsp cinnamon 1 cup unsweetened coconut flakes, 1 tsp cinnamon, 1/2 cup stevia, 1 tsp salt
2 eggs (scramble before adding)
pinch of salt
1 can evaporated milk
Keto Friendly Crustless Pumpkin Pie with Paleo Granola Topping Instructions
For pie: Mix all ingredients together. Put all pie ingredients into pie dish which has been lightly sprayed with oil. Cook 15 minutes on 425, lower temp to 350 and bake 40-50 minutes.
Granola: melt coconut oil, vanilla, and stevia in crock pot on high. add all other ingredients when coconut oil is melted. cook for 2 hours and stir every half hour. This recipe makes a lot. I take some and sprinkle on top of the pie when done.
