Keto Maple Pumpkin Bake Recipe

Keto Maple Pumpkin Bake Recipe Ingredients
- 1 small pumpkin (approx 10 slices)
- 1/4 cup butter
- 2tbs sugar-free maple syrup
- dash of maple extract (Optional)
- 1/4 tsp cinnamon
- 1/8 cup chopped walnuts
- Sprinkle some sea salt
- pecans to decorate (optional)
Keto Maple Pumpkin Bake Recipe Instructions:
- Chop a small pumpkin into 1-inch cubes with the rind removed. (I used a white pumpkin as we don’t have orange ones yet.)
- Add pumpkin to a casserole dish.
- In a microwave safe bowl add 1/4 cup butter with 2 Tbs sugar-free syrup and add a dash of maple extract (Optional) 1/4 tsp allspice and a dash of cinnamon. Microwave for 30 seconds or until melted.
- Next, add 1/8 cup of chopped walnuts to butter mixture, stir and pour over pumpkin mix/toss together till all is coated. Sprinkle a little sea salt on top and place pecans. (Optional)
- Now bake it at 400 for 45 mins or until tender.
This makes a great side dish other than sweet potatoes!
