Keto No Bake Strawberry Cheesecake Parfait

 

This Keto No Bake Strawberry Cheesecake Parfait Recipe is absolutely delightful.  It’s one of those recipes that you would love to make just about any time of the year but I can see these pretty little parfaits displayed nicely on a table at a holiday dinner party.  Can you tell I’m already thinking about the holidays?  Aren’t they elegant looking?  Especially when you serve them in a tall and slender parfait dish.  If you decide to serve them like we have, just be sure to order some tiny spoons to go with them.  It’s a dainty little treat!

This is just as good as the Keto S’mores Mug Cake we made last week!  Did you see that Keto dessert idea yet?  Omgosh, it’s so yummy!  You’ve gotta try it.  It’s a quick mug cake recipe so it won’t take anytime at all to make.

I also want to mention that this recipe is a rare treat for me on my Keto journey.  These substitute sugars can tend to stall you if you are doing Keto for weight loss.

I remember when I started my keto journey.  I think I made every bread and dessert substitute there was on Pinterest.  I look back at my journey and realize I’ve done this keto diet in stages.   When I made every substitute dessert, I was in stage one. I was trying to replace all of the treats I love with keto friendly substitutes.  I found this to be pretty important for my journey too.  If I didn’t have a substitute, I probably would have quit the keto diet a long time ago.  Seriously.

The second stage of my keto journey happened when I hit a weight loss stall doing the Ketogenic diet.  I remember the frustration of this stage.  I remember thinking I was doing everything right but the weight was not coming off.  This was the turning point in my keto diet mindset.

This is going to sound absolutely crazy but I took my diet back down to the absolute basics without bread and dessert substitutes and I kicked out of my stall!  I did the Beef and Butter Fastâ„¢ and learned a ton about my body.  Beef and butter may sound a bit crazy but it only took 4 days to have this Ah-ha moment in my keto journey.  It was such a valuable lesson to learn at a critical time too.  I was at a point where I would either give up or give it all I’ve got.  I decided to give it all I’ve got and learn exactly what my body was going through.  I’m so glad I did too!

I use a Keto Diet Journal to help track my food so I know exactly what my body likes and doesn’t like when it comes to the foods and desserts I consume.  I highly suggest you start tracking your own food.  You will see a clear pattern in how you feel and the results you want.

I learned that sugar substitutes are approved in the keto way of life but should be treated as a rare opportunity.  This may not be the same for you but this is what it is for me and my journey.  I love these keto dessert options but I know my limits.  I will indulge when I want to but I will stay true to my journey.  It’s just that…  It’s a journey and I am loving my journey!

I wanted to share my mindset with you because I feel it’s important when you see delicious recipes like this No Bake Strawberry Cheesecake Parfait recipe.  It’s delightful.  It’s a treat!  It’s a blessing that we can still be on our own Keto journies and indulge in these treats with no guilt.

I plan to make this dessert over the holidays too.  My non-Keto family members will still enjoy it and probably not even know a difference.  I know it will help my parents who are also on a low carb lifestyle.  My dad was facing diabetes until he took over his own journey.  Keto has been wonderful for him and his A1C levels!  Thank you, Keto!!

Note:  You can use the Almond Flour Cheesecake Crust for just about any dessert recipe that requires a crust.  It’s simple to make and it can easily replace any crust you need.

Keto No Bake Strawberry Cheesecake Parfait Recipe Ingredients

Almond Flour Cheesecake Crust:

  • 3/4 cup of almond flour
  • 1 1/2 tablespoons of stevia
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of butter, melted

Filling:

  • 16oz cream cheese, softened
  • 1/2 cup of sweetener substitute
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of lemon extract
  • 1/4 teaspoon of xanthan gum
  • 1/2 pint of fresh strawberries, chopped, to garnish

 

Keto No Bake Strawberry Cheesecake Parfait Recipe Instructions

  1. In a small bowl, mix crust ingredients together and divide into 6 small servings cups/bowls. Refrigerate.
  2. In a large bowl, cream together cream cheese and sugar substitute. Fold in remaining ingredients and continue mixing until it has thickened.
  3. Add cream cheese mixture into a pastry bag and evenly add in the cream cheese mixture into the 6 serving dishes over the crust.
  4. Garnish with fresh chopped strawberries. Refrigerate an hour before serving.
