This is one of the BEST Keto Chocolate Mug Cake recipes I have ever tried.  I have tried many!  It really does only take one minute to cook in the microwave too!  It’s the perfect way to enjoy a low carb and keto friendly dessert when you have a craving for something special.

The reason why this recipe is better than a few of the others is because of two special ingredients.  My grandma was a good cook.  She loved to bake.  Her loaves of bread were the best there was.  She taught me to use sour cream in any bread recipe to make it moist.  It’s a no-fail secret!  The next secret ingredient is the instant coffee.  I promise you won’t taste it.  When you mix instant coffee with anything chocolate, it intensifies the taste!

I tend to bake and cook all the time so I tend to have instant coffee on hand.  But if you don’t normally use instant coffee, you might consider buying the single serving instant coffee packs.  This way you can use a small amount at a time without the worry of your instant coffee going bad.

 

The next secret ingredient is the instant coffee.  I promise you won’t taste it.  When you mix instant coffee with anything chocolate, it intensifies the taste!  I did a taste test for my very picky 12-year-old.  She is a straight shooter when it comes to giving her opinion about food.  She will definitely tell you if something is off or doesn’t taste right.  I didn’t tell her the difference between the cake recipes but I make one with the instant coffee and one without.  Everyone in my family agreed, there was something special about the one with the instant coffee!  It does make a difference.  Go ahead, try the test yourself.  I bet from now on anytime you bake something made of chocolate, you also use instant coffee grounds in the recipe.

You should be able to find Lily’s Chocolate chips at your local Natural Grociers, Sprouts or Whole Foods.  They are quickly growing in popularity so the fight tends to be on to get some before they sell out at my store.  I have had to get them online when in a pinch.

 

The other ingredient I use in this recipe is Swerve sweetener.  It’s the best tasting keto friendly sugar substitute I’ve found.  I purchase the granules and the powdered blend.  I find I use the powered blend most often though.  It’s another ingredient growing in popularity.

Keto Chocolate Cake Mug Cake Ingredients

  • 2 tbs coconut flour
  • 1 1/2 tbs almond flour
  • 2 tablespoons butter
  • 1 egg
  • 1/4 teaspoon instant coffee grounds
  • 1 tsp vanilla extract
  • 1 tbs Lily’s Chocolate Chips
  • 2 tbs Cocoa Powder
  • 1 1/2 tbs Swerve Powdered Sugar
  • 2 tbs sour cream

I find that you can use a regular coffee mug or use ramekins.  I really like ramekins myself.

 

Keto Chocolate Cake Mug Cake Instructions

First, combine the butter and lily’s chocolate chips in a bowl and microwave for about 20 seconds until the ingredients have melted.

Mix in the instant coffee grounds and cocoa powder into the warm ingredients.  They will blend right in.

Add the coconut flour, almond flour, egg, vanilla extra and Swerve Powdered sugar.  Mix it until all the ingredients have blended together nice and smooth.

Finally, add the 2 tablespoons of sour cream.

Separate the ingredients into two ramekins and microwave them separately for between 45 seconds and 60 seconds each.  I have a high powered microwave and it only takes 45 seconds for my cake to be completely done.

Optional:  Top with whipped cream.

Serve warm and enjoy!

  2. What do I do if I don’t have coconut flour on hand ? And can I use GHEE for a substitute,instead of butter?

    1. Yes, you can. Also, if you want to make it powdered texture, you can just pulse it in the blender to get that texture too.

      Decent, for when you crave a little something sweet. My period is due tomorrow which means I want a little something. I realized I had no cocoa powder after I started the recipe. I follow the recipe the same, except no chocolate, didn’t add egg because it adds an egg flavor (I like eggs but NOT in mug cakes, lol) I also added walnuts. 😉 also, I didn’t add coffee because I couldn’t find it in my pantry. Plus since no chocolate, no point. I added it to one mug. Came out good and satisfied sweet craving. Also because it was one serving, I microwaved 90 seconds. Would make again.
