Pressure Cooker Cajun Pork Roast Recipe
I have THE BEST Pressure Cooker Cajun Pork Roast Recipe for you! This recipe is all about the seasonings and one secret ingredient. Isn’t it amazing how you can just dump a few ingredients in a pressure cooker and have one heck of a meal? The hubster says I use my pressure cooker more than my oven and guess what? He’s right!
I used a pork shoulder that weighed 4.5 lbs in this recipe. I cooked it in my Instant Pot LUX 6 quart pressure cooker. It came out PERFECT!
Pressure Cooker Information
Here’s a bit of information about the pressure cooker. I own both the Instant Pot LUX 6 quart pressure cooker model and the Instant Pot DUO 6 quart pressure cooker model. There are only a couple of differences between the models I have. If I had to pick all over again, I would definitely choose the Instant Pot DUO 6 quart pressure cooker model and here’s why:
- It has a thick removable cord for easy storage.
- It has the yogurt option where the LUX does not.
- It has a lid stand clip.
That’s it. Those are the only differences. I use them both and sometimes I use them both at the same time. They came out with an Instant Pot DUO 8 quart model now. If you have a large family, the larger model might be for you. I have a family of four and the 6 quart is perfect.

Pressure Cooker Cajun Pork Roast Recipe Ingredients
- 1 Pork Shoulder (5 lbs or less)
- 2 tablespoons salt
- 1 tablespoon seasoned salt
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon pepper
- 1 tablespoon lemon pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 1 teaspoon oregano
- 2 tablespoons brown sugar
- 2 cups of coffee (I use Instant Coffee for cooking)
- 1 small can of tomato paste
- 1 large can of fire roasted diced tomatoes
Pressure Cooker Cajun Pork Roast Recipe Instructions
First, cut the pork roast into 4 or 6 pieces. This allows the roast to cook evenly and quicker.
Combine all the seasoning ingredients with the brown sugar to create your pork rub.
TIP: if you like the spicy part you can always add more cayenne pepper. If you don’t like the spice you can always reduce it. My kids hate spicy food so I barely use 1 teaspoon in my recipe.
Rub the seasonings onto each piece of the pork roast and place the seasoned pieces in a zip lock bag in the refrigerator for at least 6 hours. I usually let it sit overnight.
When you are ready to cook your pork roast you will combine 2 cups of strong coffee with the tomato paste. I use a whisk to combine these two ingredients until it’s smooth. I never drink instant coffee but I keep instant coffee crystals on hand for cooking.
Place the raw pieces of pork roast in the bottom of the pressure cooker without the rack. Pour the coffee and tomato paste mixture over the meat. Then add a full can (the large can) of Fire Roasted diced tomatoes in the instant pot.
Lock the lid and make sure the vent is set to seal.
Cook it on manual for exactly 50 minutes. Then allow it to sit for about 5 minutes.
Carefully release the pressure from the seal. I always us a wooden spoon there’s no risk of getting burned in the process. (I tend to be very cautious)
Remove the pork roast and use two forks or pork puller claws to pull the pork apart. The meat will be extremely tender and easy to pull so there’s not much force needed at all.
I placed the pulled pork back in the juices and place it in a dish that is ready to serve!
We love to served pulled pork on a bun topped with coleslaw. YUMMY!!!
It takes amazing without coleslaw too if you prefer.
