BEST Keto Taco Casserole
This Keto Taco Casserole is super simple to make and keto friendly too! If you are sitting there looking at a package of ground beef and you don’t know how to turn it into a delicious dinner idea, this is your recipe! Taco Casserole never tasted so good.
I make this recipe with 2 lbs of ground beef so it serves up a big amount. This recipe makes between 6 and 8 servings. There are only 4 of us in our family but I still make the same amount because we love it as leftovers too! The seasonings really set in and taste amazing the second day too!

Keto Taco Casserole Ingredients
- 2 lbs ground beef
- 1 small onion, diced
- 4 tablespoons Homemade Taco Seasoning (or two store-bought packets of taco seasoning)
- 1 1/2 cups Mexican Blend Cheese, shredded
- 1 10 Oz can of Rotel (diced tomatoes and green chilies)
- 1 4.5 oz can of Ortega Chopped Green Chilies
- 4 eggs, beaten
- 1/4 cup heavy cream
- 1 tsp pepper
- 1 tsp salt
- 1/2 tsp Xanthan Gum (You can omit this if you drain the grease from the hamburger after you brown it)
- Optional: 1 small can Black Soybeans
- Optional toppings: Black olives, cilantro, green onions, sour cream, lettuce, sriracha sauce, jalapenos, and avocado.
Keto Taco Casserole Instructions
- Preheat the oven to 350 degrees.
- Dice the onion.
- Saute the onion in olive oil until translucent (about 4 to 5 minutes)
- Brown the ground beef with the onion, salt, and pepper.
- Add 1/2 teaspoon Xanthan gum to thicken up the grease from the beef (either that or drain the beef so it won’t taste greasy)
- Add 4 tablespoons of this Homemade Taco Seasoning recipe (or two packets of store bought taco seasoning)
- Transfer the cooked ground beef mixture to a 9 x 11 casserole dish.
- Add the optional Black Soy Beans (I use this brand of Black Soybeans found on Amazon)
- Add 1 cup shredded cheese, Rotel diced tomatoes, green chilies and stir until well combined.
- In a separate small bowl, crack the eggs and mix. Add the heavy cream to the egg mixture.
- Pour the egg mixture into the ground beef mixture in the casserole dish and stir until it’s fully combined.
- Top with the remaining shredded cheese and optional olives.
- Bake at 350 degrees for 35 to 40 minutes.
I personally love to top this hot casserole with cold shredded lettuce, sour cream, and jalapenos on top. My husband loves to drizzle it with sriracha sauce too!

Are Black Soybeans Keto Friendly?
Black soybeans are the best option for a bean substitute in this recipe. I use these Eden Organic Black Soybeans in my recipes. These are really hard to find local and I highly suggest getting them on Amazon so you are not running around all over town looking for them.
A half a cup of canned black soybeans has 1 gram net carb plus 7 grams of fiber (8 grams of total carbohydrate), 11 grams of protein, and 120 calories. The black variety is higher in some phytonutrients, including antioxidants. You can read more about black soybeans here over at Verywell Fit.

This recipe was fabulous!! I loved it and so did my entire family! I love Keto meals that dont feel as though you are “missing out” on a starch. This with some cold lettuce on top was a perfect meal that kept us feeling full!
We made this and only had a pound of hamburger and pound of mild sausage. It was delicious!!
