Cucumber and Kale Salad

- 2 tablespoons tahini
- 2 tablespoons olive oil or soybean oil often labeled "vegetable oil"
- 3 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon minced garlic
- 1 tablespoon soy sauce
- 2 teaspoons granulated keto sweetener
- 8 cups thinly sliced kale packed
- 1 cucumber peeled and sliced
- 1/2 cup chopped smoked almonds
- 1/2 cup optional golden raisins
In a small bowl, you are going to want to combine your tahini, soybean oil, lemon juice, garlic, soy sauce, water, and sugar. Make sure you stir them together until smooth.
Now, in a large bowl, you are going to want to put in your cucumbers and kale. Pour the dressing you made in the smaller bowl over the kale and cucumbers.
Marinate the kale and cucumbers with the sauce for 20 minutes at the least. Be sure to toss the salad occasionally.
Sprinkle your almonds and golden raisins on top. Once that is done, you are ready to serve!
