Strawberry Walnut Spinach Salad

DRESSING
- 3/4 cup olive oil
- 1/2 pound strawberries
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon tarragon
- 1/4 teaspoon keto granulated sweetener or granulated sugar (for non-keto)
SALAD
- baby spinach fresh
- strawberries chopped
- Parmesan cheese shaved
- walnuts
Add all dressing ingredients to food processor or blender and blend until smooth.
Toast walnuts over low heat until slightly brown.
Place Spinach on plates.
Top with strawberries and walnuts.
Add shaved parmesan cheese on top.
Serve with dressing.
