Sugar Free Blueberry Lemonade Popsicles Recipe

  • Place one tablespoon of blueberry (for the pink color), the juice of one orange, the juice of two lemons, 1/4 cup of granulated sweetener and three mint leaves in a blender.
  • Blend until combined. Adjust sweetness if desired. A quick tip: at this point, it might be very sweet or sour, but when chilled, flavors tend to be less intense.
  • Place some blueberries in each popsicle mold and then pour the lemonade. Remember to place the popsicle sticks too!
  • Place them in the freezer for at least 6 hours or until completely hardened.
  • Enjoy!

Notes

  • Replace blueberries with other kinds of berries, or all of them at the same time!
  • For low-carb popsicles, use granulated monk fruit 1:1 ratio with sugar.
  • These popsicles last all summer long. Make a few batches and have them ready to eat.
These popsicles are sweet and sour, just like lemonade. Very refreshing and easy to make. I like to have whole blueberries on the inside because it provides a nice bite, but blending them all would be cool. It won’t be pink, that’s all! You could also replace lemon with lime and add some fresh ginger; it matches nicely with citrus and mint.
