Melt the butter in a small microwave-safe bowl.
Add the vanilla, erythritol, and cinnamon to the melted butter mixture.
Place 4 cups of pecans in a large ziplock baggie.
Pour the mixture into the baggie and shake it until all the pecans have been coated with the butter mixture.
Pour the pecans on a large baking sheet. Be sure to line the baking sheet with a silicone mat or parchment paper for easy clean up.
Bake the candied pecans on 325 degrees for about 10 minutes. Careful not to leave them in longer as they will easily turn dark and burn.
Allow them to completely cool before you handle them. The sugar-free candy coating will harden once it has completely cooled.
Store in an airtight container on the countertop.
